El Jadida, founded by the Portuguese as Mazagan, is a UNESCO World Heritage Site. Its most famous structure is the underground cistern — a column-supported chamber whose water mirrors light and arches, a setting Orson Welles once used for his “Othello”. Above it lies a quiet fortified town by the sea.
