Fez

The oldest living medina in the world

Over 9,000 alleys form a labyrinth without a single road cars can use — goods are still moved by donkey today. Its most famous sight is the Chouara tannery: round stone vats full of saffron, indigo and poppy dye, where leather has been hand-dyed for centuries. A sprig of mint held to the nose helps against the strong smell.
